Step 1: Find a pan and line it with a foil sling. Let the foil hang over a few inches on all sides. Lightly grease the foil to prevent sticking
Step 2: sprinkle 2.5 tablespoons of gelatin in half a cup of water and let it sit for 15 minutes in a mixy bowl.
Step 3: While the gelatin is softening, combine the following in a saucepan:
- 0.5 cup Water
- 1/3 cup of corn syrup
- 2 cups of granulated sugar (pour in the center, don't get it on the sides to prevent crystallization)
- 1/4 teaspoon of salt
Step 4: bring to a boil over medium-high heat. Occasionally swirl the pan gently, but don't stir.
Step 5: Heat for 6-8 minutes until mixture is 240 degrees
Step 6: Gelatin softening should be done, so mix in mixer gently, and then add the boiling mixture slowly
Step 7: Raise the mixer speed in steps to high. Beat until the mixture doubles in volume, and turns white and opaque. Mix for a full 10-12 minutes (until bowl is just barely warm)!
Step 8: Toward the end, add two teaspoons of vanilla extract
Step 9: Work fast! Stop the mixy and scrape off the stuff into the lined pan. It will harden quickly, so don't worry about scraping off every little bit.
Step 10: Smooth the top
Step 11: Make a mixture of 1/2 cup cornstarch and 1/2 cup of confectioner's sugar. Dust the top of the setting marshmallow. Let it set.
Step 12: Dust cutting board, and oil a knife. Transfer the marshmallow to the cutting board and cut into shapes. Dust with the remaining cornstarch/confectioner's sugar mix to prevent sticking.
